I added a can of diced tomatoes just because we like the chunks of tomato. Katrina — Yay! And yes, the condensed stuff DOES sound gross. Probably because it is! I literally just finished this dish for dinner and it was amazing! I did add a can of chunky tomatoes and a little whole wheat flour to thicken it up. I just made this for lunch. Even my 10 year old, who is our pickiest eater and tomato-hater, came downstairs and said it smelled good and ate a whole bowl of it.
